Delicious, easy peasy slow cooking stew! Make it meaty or veggie!
1 each of red pepper, yellow pepper, aubergine, onion, 4 garlic cloves, 3 carrots – rough chunky chopped
1kg mutton, beef chuck or chicken thigh
2 tbsp tomato or pepper paste
Salt and pepper
Bay leaf, thyme, rosemary
Mix it all up, lid on, oven 160 to 170*C/gas 2/3. 4 to 5 hours cooking!
