Who can resist cheesy, crispy Turkish borek. Too good to share, so moreish, you can’t just have one slice!

Recipe:
1 pack of around 12 sheets Filo or Yufka
1kg Feta or Turkish white cheese
150 baby leaf spinach, shredded
2 cup milk
1 cup olive oil
1 egg
150ml fizzy water/soda water
Grease a large, shallow baking tray
Preheat oven to 180*C/Gas 5
Crumble together the cheese and spinach
Whisk the milk, oil and egg together in a bowl
Work one sheet at a time, brush with the milky mixture, crumble a light sprinkling of cheese on each sheet, roll up either end to meet in the middle, scrunch slightly on either side and place in your tray like a wriggly worm.
Do this with all the sheets, packing tightly in the pan.
Lay a few sheets of filo, if remaining, over the top, brushing each sheet and tucking in any overhang.
Cut the borek before baking, in to squares.
Bake in preheated oven for 30 minutes to begin.
Pour over the fizzy water and return to the oven for 20 minutes more until deeply golden and deliciously crisp.
Allow to rest for 30 minutes then serve and try to resist eating it all!
