Ingredients
5 good, tarte eating apples like Granny Smiths or Cox, peeled, cored and halved
100g sugar
100ml Calvados
1 vanilla pod, seeds and all
1 pack Ready rolled puff pastry
Preparation
Prehat oven to gas mark 4/190*C.
Put sugar in an ovenproof pan and pour in the Calvados and vanilla pod with seeds separated. Add the apples that have been cored and halved. Gently toss in what is now a caramel. Pop over a pastry lid of simple puff pastry that you've cut into the same size diameter as your pan. Place in a preheated oven at 190*C/gas mark 4 for about 30 minutes until golden. Take out and carefully turn on to a plate. Add over a generous dollop of vanilla ice cream and voila!
