Mediterranean Fast Food

Mediterranean food has always been known
for its healthy, wholesome recipes but did you know it is also the original
fast food.  If you want something quick
and easy to eat then food from the Med is a winner.  Fresh tomatoes, cheese, dips such as hummus
and natural yoghurt are all great choices. 
Here are a couple of recipes from Cyprus with eggs as a main ingredient
so something you can probably whip up in no time.

 

Sautéed
Egg and Asparagus

 

Some Asparagus (about 100 to 150g to 2 or 3
eggs)

Eggs (see above), beaten

Some oil for frying

Salt and pepper to taste

 

Preparation:

 

Fill a pan with cold water and the
asparagus.  Place on the stove and bring
to the boil.  As soon as the water boils
take off the heat and refresh in cold water. 
Refresh means to drain the partly cooked asparagus and then either
plunge into ice cold water or rinse in cold water.  What this does is to stop any type of
vegetables cooking immediately and retain their colour and texture.  Heat about 1 or 2 tbsp of oil in a frying pan
and throw in the asparagus.  Sauté the
asparagus for about 5 minutes and add your beaten eggs.  Add salt and pepper to taste and keep
stirring the eggs into the asparagus until the eggs are cooked.  Serve with some chopped tomato and bread.

 

Potatoes
and Egg

 

Some potatoes, Cyprus are the best (the
quantity is up to you but 3 or 4 medium potatoes to about 6 eggs should be
fine)

Eggs (see above), beaten

Some dried or freshly chopped mint

Salt and pepper to taste

 

Preparation:

 

If you are using last night's left over
roasted potatoes then dice into small squares and fry in some light oil until
softened and light golden brown.  Now add
your beaten eggs, mint and salt and stir in until the eggs are cooked.

 

If you are using raw potatoes then I like
to parboil mine for about 5 minutes prior to frying in the oil.  This makes them easier to cook as they don't
take as long to fry.  Parboil then drain
the potatoes, allow to cool and dice into small squares as before.  Add your beaten eggs, mint and salt and stir
until the eggs are cooked.

 

Alternatives: you can add some chopped
salami to either of the above and some chopped onion according to your
taste.  Always remember, any additions
need to be fried first along with your potato or asparagus and the eggs added
last as in the recipe.
