Hot Scones on a Snowy Day

Just tucking into some deliciously hot homemade scones with fried halloumi and lashings of butter (and a pot of fresh rose tea).  Can't think of anywhere else I'd rather be, especially on this snowy January day.  Here's the recipe for those you who fancy some yummy comfort food to really warm the cockles!

Scones with fried or grilled halloumi cheese

You will need:

225g self raising flour

1tsp baking powder

40g butter, cold and cut into small pieces

150ml milk

1 pack halloumi

Pinch of salt and pepper

Preparation:

Preheat your oven to gas mark 6/200*C 

Put the flour in a large bowl and add the baking powder, salt and pepper.  Either slice your halloumi cheese into relatively thick (about half a cm) slices and grill unti lightly browned on both sides or cut into small cubes and fry in a tablespoon of olive oil until lightly browned.  Now add the halloumi to the dry ingredients then slowly pour in the milk until you have a soft but not sticky dough.  Roll out on to a lightly floured surface to about 2cm thick then using a round cutter, cut out as many scones as you can.  Repeat this until all the dough is used up.  You could get about 12-15 scones depending on the size of your cutter.

Now brush each scone with a little milk or beaten egg and bake in the oven until golden brown, about 15-20 minutes. 

Enjoy with lashings of hot butter and rose tea on a snowy day!
