15 Aug Homemade scones in Devon
Freshly made scones in our cottage kitchen in Devon. We enjoyed them simply with local Devonshire butter and jam.
Here’s the recipe if you’d like to give them a go!
You will need (makes about 12 scones):
300g self raising flour
Pinch of salt
35g caster sugar
200ml milk (maybe more or less)
Egg or milk to glaze
Clotted cream, butter and jam to serve
Preheat your oven to 220*c/gas mark 7.
Add a pinch of salt to the flour then rub in the butter till the mixture resembles fine breadcrumbs.
Mix in the sugar.
Make a well in the centre and pour in half the milk.
Start drawing in the mixture from the sides squishing it all together. Add more milk as you go till you have soft dough.
Dust the work surface with flour and lightly roll out the mixture to about 2 inches thick.
Cut rounds using a sharp cutter or drinking glass as I did! You can make your scones large or small. The smaller they are the more you’ll get of course!
Place on a greased baking tray.
Brush with milk or egg.
Bake in the preheated oven for around 10-15 mins until well risen and golden.
Place on a cooling rack and enjoy warm with lashings of butter and jam and bit of cheeky clotted cream if you dare!
