Simply moreish!
You will need:
- 1 small pack of chilled ready filo pastry – about 12 sheets
- Handful of baby spinach leaves per person
- 50g Feta cheese
- 25g melted butter, for brushing
Preparation:
- Preheat oven to gas mark 6 or 180*C.
- Quickly wilt the spinach in a little olive oil and salt. Layout one or two sheets of the filo pastry per person, brush the top with melted butter, layer on some spinach, crumble over some feta cheese and quickly pull up the sides to resemble the end of a cracker.
- Sprinkle with some more melted butter and place in the oven for 10 minutes or until golden brown and crispy.
