Scotch Pancakes with Maple syrup

These are delicious anytime of the day and kids and adults will love them alike!  Enjoy with maple syrup, golden syrup, honey, nutella, fruit, cream.....I could go on and on!  Make them either savoury or sweet.  Enjoy

You will need:

225g plain flour

1 tsp baking powder

25g caster sugar (optional)

Pinch of salt

1 egg

25g melted butter

225 to 250ml milk

Preparation:

Put the flour, baking powder, salt and sugar in a large mixing bowl.  Crack in your egg and a little of the milk.  Use a whisk to mix and gradually keep adding milk and whisking all the time.  You should have a creamy, double cream consistency.

Now add the melted butter, give it one last whisk and set aside. At this point, you can add fruit such as blueberries, raspberries or chopped strawberries to the mixture.  Even some mashed banana is good.

Note: if you haven't added any sugar, then you can add some powdered stock or some cheese and other seasonings to give it a savoury flavour.

Get a large frying pan and place over a medium heat.  You will need some oil and kitchen paper.  Put some oil in the pan and heat up to almost smoking point.  Wipe away any excess as you only want to put a thin coating on the pan.

Pour in some batter, in small batches so you get about 3 or 4 in the pan.  Fry until in golden brown on one side (no more than a minute) then flip over and do the other side.

Pile up the pancakes in a plate, covered with a tea towel to keep them warm until you've finished making them all and used up all the batter.

Serve right away with butter, honey, scrambled eggs, salmon or whatever takes your fancy!  Eat them plain too!
